  • 2 cups grated zucchini
  • 1 cup all-purpose flour
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the grated zucchini, oil, brown sugar, granulated sugar, eggs, and vanilla.
  3. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing just until combined. (Don’t overmix!)
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For a twist, try adding chocolate chips, nuts, or dried fruit. To keep it healthier, substitute half of the all-purpose flour with whole wheat flour and reduce the sugar.
