  • 2 tablespoons aji amarillo paste Substitute with yellow curry paste if unavailable.

Preparation
  1. Heat olive oil in a pan over medium heat. Add the chopped onion and minced garlic; sauté until the onion is translucent.
  2. Add the chicken pieces and cook until browned and no longer pink.
  3. Stir in the aji amarillo paste and cook for another minute.
  4. Pour in the chicken broth and bring to a simmer.
  5. Lower the heat and add heavy cream; let it simmer for about 10 minutes until the sauce slightly thickens.
  6. Season with salt and pepper.
  7. Serve hot over cooked rice or pasta.

Notes

This dish can be made ahead of time and reheated. It holds well in the fridge for up to 3 days and freezes beautifully for up to 3 months. For extra flavor, consider adding spinach or bell peppers.
