Ingredients
  

For the Chicken Filling
  • 1 lb ground chicken (thigh meat preferred for moisture)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic (minced)
  • 2 stalks green onions (finely chopped)
  • 1 tablespoon cornstarch
  • 1 teaspoon rice vinegar
  • ½ teaspoon white pepper
  • 30–40 pieces wonton wrappers
For the Broth
  • 6 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon Shaoxing wine or dry sherry
  • 1 teaspoon sesame oil
  • 1 thumb-sized piece ginger (sliced)
  • 2 cloves garlic (smashed)
  • 2 scallions (cut into thirds)
  • few drops chili oil (optional)
For Garnish
  • to taste thinly sliced scallions
  • to taste fresh cilantro leaves
  • to taste chili crisp or chili oil (optional)
  • 1 squeeze lime (for brightness)

Method
 

Preparation
  1. In a bowl, combine ground chicken, soy sauce, oyster sauce, sesame oil, ginger, minced garlic, green onions, cornstarch, rice vinegar, and white pepper. Mix well until fully combined.
  2. Place a wonton wrapper on a clean surface. Add about a teaspoon of the chicken filling in the center. Moisten the edges with water, fold, and seal tightly. Repeat with remaining filling and wrappers.
Cooking
  1. In a large pot, combine chicken broth, soy sauce, Shaoxing wine, sliced ginger, smashed garlic, and scallions. Bring to a boil and let it simmer.
  2. Carefully add the dumplings to the simmering broth and cook until they float and are cooked through, about 5–7 minutes. Season with salt to taste.
Serving
  1. Ladle the dumpling broth into bowls, garnish with thinly sliced scallions, fresh cilantro, a few drops of chili oil, and a squeeze of lime for that extra freshness.

Notes

Don’t skip the ginger in the broth; it adds a zing that elevates the entire dish! If storing leftovers, keep them refrigerated in an airtight container for up to 3 days. Dumplings can be frozen for up to 3 months.
