White Chocolate Raspberry Tiramisu

Ingredients
  

Dessert Layers
  • 1 cup heavy cream whipped until soft peaks form
  • 8 oz mascarpone cheese
  • 1/2 cup white chocolate melted
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup espresso or strong coffee cooled
  • Ladyfinger cookies or sponge cake for layering
Garnish
  • Cocoa powder for dusting
  • Grated white chocolate for sprinkling

Method
 

Prepare the Mixtures
  1. In a large mixing bowl, whip the heavy cream until soft peaks form.
  2. In another bowl, combine mascarpone cheese, melted white chocolate, sugar, and vanilla extract until smooth.
  3. Gently fold the whipped cream into the mascarpone mixture until well combined.
Assemble the Tiramisu
  1. Dip each ladyfinger into the cooled espresso and arrange a layer in the bottom of a serving dish.
  2. Spread a layer of the white chocolate mixture over the cookies, then add a layer of raspberries.
  3. Repeat the layers until all ingredients are used, finishing with the mascarpone mixture on top.
Chill and Serve
  1. Chill in the refrigerator for at least 4 hours or overnight.
  2. Before serving, dust with cocoa powder or sprinkle grated white chocolate on top for garnish.

Notes

This tiramisu keeps well for about 3–4 days in the fridge. Cover it well! Can be frozen, but texture may change slightly when thawed.
