Preparation
- Preheat the oven to 350 degrees F (175 degrees C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream the softened butter and granulated sugar together until fluffy and well combined.
- Add in the egg, vanilla extract, lemon juice, and lemon zest. Mix until incorporated.
- Stir in the unbleached flour, baking powder, salt, and baking soda. Mix well until just combined.
Baking
- Use a 1 tablespoon cookie scoop to create cookie dough balls and place them about 1.5 inches apart on the prepared baking sheet.
- Bake for 7 minutes until they are a light golden color.
- Remove from the oven and let cool on the baking sheet for 10 minutes before transferring to a cooling rack.
Glazing
- While the cookies cool, prepare the glaze by mixing lemon juice into the powdered sugar. Add a couple drops of vanilla if desired.
- Stir until smooth, adjusting with more lemon juice or water for consistency.
- Drizzle the glaze over the cookies and let cool completely.
Notes
Chill your dough for 30 minutes before baking for enhanced flavor. Use fresh lemon zest for best results. You can substitute granulated sugar with coconut sugar. Experiment with adding orange juice instead of lemon for a different glaze flavor.
