Ingredients
  

For the Peanut Butter Mixture
  • 1 cup cooked quinoa Make sure quinoa is fluffy.
  • 1 cup creamy peanut butter
  • 1/4 cup maple syrup or agave nectar Adjust sweetness to taste.
  • 1 teaspoon vanilla extract
  • 1 pinch salt Enhances flavor.
For the Chocolate Topping
  • 1/2 cup dark chocolate chips Melt until smooth.

Method
 

Preparation
  1. In a bowl, mix the cooked quinoa, peanut butter, maple syrup, vanilla extract, and a pinch of salt until everything is well combined.
  2. Melt the dark chocolate chips in a microwave or double boiler until smooth.
  3. Line a muffin tin with cupcake liners.
  4. Spoon a layer of the peanut butter mixture into each liner.
  5. Drizzle some melted chocolate on top.
  6. Repeat the process with another layer of the peanut butter mixture and then top with more melted chocolate.
  7. Chill in the refrigerator until set, about 30 minutes.

Notes

These cups can be served as is, or topped with chopped nuts or sea salt for extra flavor. Store in the fridge for up to a week, or freeze them for up to a month.
