Ingredients
  

Dough Ingredients
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 packet active dry yeast (2 1/4 tsp)
  • 1/2 teaspoon salt
  • 1/2 cup whole milk, warmed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup unsalted butter, melted
For Frying and Serving
  • Oil for frying
  • Powdered sugar for dusting

Method
 

Preparation
  1. In a bowl, combine warm milk, sugar, and yeast. Let it sit until frothy, about 5 minutes.
  2. In another bowl, whisk together flour and salt.
  3. Add the yeast mixture, eggs, vanilla, and melted butter to the flour. Mix until a dough forms.
  4. Knead the dough on a floured surface until smooth, about 5-7 minutes.
  5. Place in a greased bowl, cover, and let it rise until doubled, about 1 hour.
  6. Roll out the dough to about 1/4 inch thick and cut into squares.
Cooking
  1. Heat oil in a deep fryer or large pot to 350°F (175°C).
  2. Fry beignets until golden brown, about 2-3 minutes per side.
  3. Remove and drain on paper towels.
  4. Dust with powdered sugar before serving.

Notes

Best served warm. For extra flavor, add a splash of vanilla or a sprinkle of cinnamon in the powdered sugar. Store leftovers in the fridge for 2 days or freeze for up to a month.
