Cake Ingredients
  • 1.75 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 0.75 cups unsweetened cocoa powder
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs Room temperature is ideal
  • 1 cup whole milk Room temperature is ideal
  • 0.5 cups vegetable oil Can substitute with butter
  • 2 teaspoons vanilla extract Almond extract can be used for variation
  • 1 cup boiling water Important for texture
Ganache Ingredients
  • 1 cup heavy cream For ganache
  • 1 cup semi-sweet chocolate chips For ganache

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
  3. Add eggs, milk, oil, and vanilla to the dry ingredients. Beat on medium speed for about 2 minutes. Stir in the boiling water. The batter will be thin.
Baking
  1. Pour the batter evenly into the prepared pans.
  2. Bake for 30-35 minutes until a toothpick inserted in the center comes out clean.
  3. Let cool in pans for 10 minutes, then remove from pans to cool completely.
Ganache Preparation
  1. Heat the cream until it starts to simmer.
  2. Pour the hot cream over the chocolate chips and let sit for 5 minutes, then stir until smooth.
Assembly
  1. Place one cake layer on a plate, spread a layer of ganache on top, then place the second cake on top.
  2. Pour the remaining ganache over the top and let it drip down the sides.
  3. Slice and enjoy your ultimate chocolate fudge cake!

Notes

Store cake in an airtight container for up to a week in the fridge. Freeze individual slices for up to 3 months. Reheat in the microwave for a few seconds for fresh taste.
