Preparation
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Stir in the melted butter until well combined.
- Add the baking soda and a pinch of salt; mix it all together.
- Stir in the sugar, beaten egg, and vanilla extract.
- Finally, mix in the flour until just incorporated. Don’t overdo it!
- Pour the batter into a greased loaf pan.
Baking
- Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For serving, top with a pat of soft butter, pair with fresh berries, or add a drizzle of honey. This banana bread stays fresh for about 3-4 days at room temperature in an airtight container. For longer storage, wrap slices tightly in plastic wrap and freeze for up to 3 months.
