Vegetables
  • 2 medium zucchini Sliced
  • 2 cups cherry tomatoes Halved
  • 3 cloves garlic Minced

  • Fresh basil Optional, for garnish

  • 1 package Pasta of choice (spaghetti or penne) Cooked according to package instructions

Method
 

Preparation
  1. Cook the pasta according to package instructions. Drain and set aside.
  2. While the pasta cooks, slice the zucchini and halve the cherry tomatoes.
Cooking
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add minced garlic and sauté until fragrant.
  3. Toss in the zucchini and cook for about 5 minutes until tender.
  4. Stir in the cherry tomatoes and cook until they start to burst and soften, about 3-4 minutes.
  5. Season with salt and pepper to taste.
  6. Toss the cooked pasta with the vegetable mixture.
  7. Serve hot, garnished with fresh basil if desired.

Notes

This dish can be stored in an airtight container and lasts up to 3-5 days in the fridge. For a different flavor, add a pinch of red pepper flakes or top with grated Parmesan cheese before serving.
