Ingredients
  

Shrimp Marinade
  • 1 pound large shrimp, peeled and deveined Use fresh shrimp for the best flavor.
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper Adjust for spice level.
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish) Optional for serving.

Method
 

Preparation
  1. In a bowl, whisk together olive oil, lemon juice, garlic, paprika, cayenne pepper, salt, and pepper.
  2. Add the shrimp to the marinade and toss to coat. Let it marinate for 30 minutes.
Grilling
  1. Preheat the grill to medium-high heat.
  2. Thread the shrimp onto skewers. If using wooden skewers, make sure they’re soaked in water.
  3. Grill the shrimp for 2-3 minutes per side until pink and cooked through.
  4. Remove from the grill, garnish with fresh parsley, and serve.

Notes

For a twist, try adding honey to the marinade or using firm tofu or veggies for a vegetarian version. Store leftovers in an airtight container in the fridge for up to 3 days.
