Preparation
- In a bowl, whisk together olive oil, lemon juice, garlic, paprika, cayenne pepper, salt, and pepper.
- Add the shrimp to the marinade and toss to coat. Let it marinate for 30 minutes.
Grilling
- Preheat the grill to medium-high heat.
- Thread the shrimp onto skewers. If using wooden skewers, make sure they’re soaked in water.
- Grill the shrimp for 2-3 minutes per side until pink and cooked through.
- Remove from the grill, garnish with fresh parsley, and serve.
Notes
For a twist, try adding honey to the marinade or using firm tofu or veggies for a vegetarian version. Store leftovers in an airtight container in the fridge for up to 3 days.
