Taco Tortilla Roll Ups

Ingredients
  

Creamy Filling
  • 8 oz Cream cheese (softened)
  • 4 oz Sour cream
  • 2 tbsp Taco seasoning
  • 1/3 cup Salsa (taco or picante sauce)
  • 1-2 Jalapenos (seeded and diced finely, up to taste)
  • 1 1/2 cups Cheddar cheese (shredded)
  • 1 1/2 cups Chicken (cooked and shredded)
  • 1/3 cup Cilantro (finely chopped)
Tortillas
  • 6 8 inch flour tortillas

Method
 

Preparation
  1. In a large bowl, combine all ingredients except for the tortillas until well mixed.
  2. Lay a tortilla on a plate and spread an even layer of the creamy mixture all the way to the edges (around 2 to 3 tbsp).
  3. Roll up the tortilla tightly and place it on a plate. Repeat until all ingredients are used.
  4. Chill the rolled tortillas in the fridge for 2 hours. This step enhances the flavor and helps them hold together better.
  5. When ready, slice each rolled tortilla off the ends and set aside.
Serving
  1. For a pop of freshness, garnish with additional cilantro and serve.

Notes

Make sure your tortillas are at room temperature before rolling for flexibility. They can last in the fridge for up to 3 days, and freeze well for up to 2 months.
