  • 2 medium sweet potatoes, peeled and diced
  • 1 pound boneless, skinless chicken breast, diced
  • 1 cup BBQ sauce
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

  • cilantro for garnish

Method
 

Cooking
  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced sweet potatoes and cook until tender, about 10-15 minutes.
  3. Toss in the diced chicken and cook until browned and cooked through, about 5-7 minutes.
  4. Pour in the BBQ sauce and stir to coat everything evenly.
  5. Sprinkle cheese over the top and cover the skillet until it melts.
  6. Season with salt and pepper to taste.
  7. Serve hot, optionally topped with green onions, avocado, or cilantro.

Notes

Leftovers can be stored in the fridge for up to 3-4 days in an airtight container. Reheat in the microwave or on the stove. It also freezes well, but thaw overnight in the fridge before reheating.
