Ingredients
  

For the crust
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
For the filling
  • 3 packages (8 ounces each) cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 8 ounces semi-sweet chocolate, melted
For topping
  • 1 cup whipped cream For topping

Method
 

Preparation
  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press this mixture into the bottom of a 9-inch springform pan.
  3. In another bowl, beat cream cheese, 1 cup sugar, and vanilla until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in the melted chocolate until fully combined.
  6. Pour the chocolate mixture over the crust in the springform pan.
Baking
  1. Bake for 55-60 minutes or until the center is set.
  2. Let it cool, then refrigerate for at least 4 hours.
Serving
  1. Before serving, top with whipped cream and chocolate shavings.

Notes

For a little flair, consider adding a pinch of espresso powder to enhance the chocolate flavor. You can also use low-fat cream cheese for a lighter version. Don't forget to chill before serving for the best texture.
