  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup lemon curd

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking powder, and salt until well mixed.
  3. In another bowl, cream the butter and sugar together until light and fluffy.
  4. Beat in the egg and vanilla until well combined.
  5. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  6. Scoop tablespoon-sized amounts of dough and form them into balls.
  7. Place the balls on a baking sheet lined with parchment paper. Create a small indentation in the center of each ball using your thumb.
  8. Fill the indentation with a small amount of lemon curd.
  9. Bake for 10-12 minutes, or until the edges are lightly golden.
  10. Let cool on a wire rack before serving.

Notes

Chill the dough for 30 minutes for enhanced flavor. Serve with fresh lemon slices or vanilla ice cream. Store in an airtight container for up to 3 days at room temperature, a week in the fridge, or freeze unbaked dough balls for later.
