Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In one bowl, mix the almond flour, rolled oats, baking soda, and salt.
  3. In another bowl, whisk together the melted coconut oil, sugar-free sweetener, egg, and vanilla extract.
  4. Combine the wet and dry ingredients until well mixed to form a dough.
  5. Scoop tablespoon-sized portions of dough onto a lined baking sheet.
  6. Bake for 12-15 minutes, or until golden brown.
  7. Let cool before serving.
