  • 2 cups fresh strawberries, sliced
  • 4 cups mixed greens (spinach, arugula, etc.) You can mix different types of greens.
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled Can be substituted with goat cheese or omitted for a lighter option.
  • 1/4 cup almonds or walnuts, chopped Pecans or sunflower seeds can be used as alternatives.
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Method
 

Preparation
  1. Cook the orzo pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooked orzo, sliced strawberries, mixed greens, red onion, feta cheese, and nuts.
  3. In a separate small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Serve immediately or refrigerate for up to an hour before serving.

Notes

It's best to store leftovers in the fridge for up to 24 hours, keeping the dressing separate to avoid sogginess. Optional to add grilled chicken or shrimp for a complete meal.
