Ingredients

For the Crullers
  • 1 cup all-purpose flour
  • 1/2 cup water
  • 1/4 cup unsalted butter
  • 2 large eggs room temperature
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • Oil for frying enough to fill the fryer or pan
For the Glaze
  • 1 cup powdered sugar
  • 1/4 cup strawberry puree
  • 1 tablespoon milk

Method

Preparation
  1. In a pot, combine water, butter, and salt. Bring to a boil.
  2. Add flour all at once and stir until a dough forms. It should pull away from the sides of the pan.
  3. Allow the mixture to cool slightly, then mix in the eggs one at a time along with the vanilla extract until smooth.
Frying
  1. Heat oil in a fryer or deep pan until hot.
  2. Use a piping bag to pipe the dough into ring shapes into the oil. Fry until golden brown on both sides.
  3. Remove and drain on paper towels.
Glazing
  1. In a separate bowl, mix powdered sugar, strawberry puree, and milk to create the glaze.
  2. Dip the cooled crullers into the glaze and set on a wire rack to let it set.

Notes

Serve warm for the best experience. Refrigerate leftovers for about 1-2 days or freeze for up to 1 month. Reheat in an oven for a few minutes to restore texture.
