  • 4 cups fresh strawberries, hulled and sliced Use fresh strawberries if possible; frozen can make it a bit watery.
  • 1 cup sugar
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk For a vegan option, substitute with almond or soy milk.
  • 1/2 cup butter, melted For a vegan option, substitute with coconut oil or vegan butter.
  • 1 teaspoon vanilla extract

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the sliced strawberries, sugar, and lemon juice. Toss to coat.
  3. In another bowl, mix the flour, baking powder, and salt.
  4. Add in the milk, melted butter, and vanilla extract; stir until just combined. Don’t over-mix—it should be a bit lumpy.
Baking
  1. Pour the strawberry mixture into a greased baking dish, then pour the batter over the top.
  2. Bake for 30–35 minutes or until the cobbler is golden brown.
  3. Let the cobbler cool slightly before serving warm with a scoop of vanilla ice cream.

Notes

This cobbler can be stored in the fridge for about 3-4 days. It can be baked ahead of time and refrigerated. Reheat in the oven or microwave as needed. Pro tip: Don’t skip letting it cool; this helps it set for better slices.
