  • 1 cup fresh strawberries, diced Use fresh strawberries for the best flavor.
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup cream cheese, softened Let it soften for better mixing.
  • 1/2 cup milk Can substitute with almond milk for a vegan version.
  • 1/4 cup vegetable oil
  • 1 large egg For a vegan version, replace with a flax egg.
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Method
 

Baking Instructions
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, cream together the cream cheese, sugar, and egg until smooth.
  3. Stir in the milk and vegetable oil until well combined.
  4. In another bowl, mix the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Fold in the diced strawberries and vanilla extract.
  7. Divide the batter evenly among the muffin cups.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow to cool slightly before serving.

Notes

Store in an airtight container at room temperature for 2-3 days, in the fridge for up to a week, or freeze for up to a month. Reheat in the microwave for 10-15 seconds for a freshly baked taste.
