Preparation
- Preheat the oven to 400°F (200°C).
- In a bowl, mix together the chopped spinach, feta cheese, cream cheese, garlic powder, salt, and pepper until well combined.
- Roll out the puff pastry or tortillas on a flat surface.
- Spread the spinach and feta mixture evenly over the dough.
- Roll the pastry tightly to form a log.
- Slice the log into pinwheels about 1 inch thick.
- Place the pinwheels on a baking sheet lined with parchment paper.
- Brush the tops with olive oil.
Baking
- Bake for 15-20 minutes or until golden brown.
- Serve warm as an appetizer.
Notes
These pinwheels can be prepped ahead of time and baked just before serving. They store well in the fridge for 3-4 days. You can also freeze uncooked pinwheels for later baking.
