  • 1 piece bell pepper, chopped
  • 1 piece onion, chopped
  • 2 cloves garlic, minced Don’t skip toasting the garlic for maximum flavor.
  • 1 can black beans, drained and rinsed Alternatives include kidney beans or pinto beans.
  • 1 cup corn kernels
  • 1 tablespoon chili powder Adjust for spice preference.
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Method
 

Cooking Instructions
  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced chicken breasts, seasoning with salt, pepper, chili powder, and cumin. Cook until browned and cooked through, about 6-8 minutes.
  3. Stir in onion, bell pepper, and garlic to the skillet, sautéing until the veggies are tender, about 5 minutes.
  4. Mix in black beans and corn, heating until everything is warmed through.
  5. Garnish with fresh cilantro before serving.

Notes

This dish can be served with warm tortillas, a side of rice or quinoa, or creamy avocado slices. Leftovers keep well in the fridge for 3-4 days or freeze for up to 3 months. Reheat in microwave or skillet with a touch of olive oil.
