Ingredients
  

Vegetables
  • 1 piece zucchini, sliced
  • 1 piece bell pepper, cut into strips
  • 1 piece red onion, cut into wedges
  • 1 cup cherry tomatoes
  • 1 cup mushrooms, whole
Marinade and Sauce
  • 2 tablespoons olive oil
  • 1 cup BBQ sauce Use your favorite brand or homemade.
  • 1 teaspoon chili powder Adjust for spice preference.
  • 1 teaspoon garlic powder
  • to taste Salt and pepper For seasoning.

Method
 

Preparation
  1. Preheat the grill to medium-high heat.
  2. In a large bowl, combine the vegetables and drizzle with olive oil, salt, pepper, chili powder, and garlic powder. Toss to coat evenly.
  3. Thread the vegetables onto skewers or place them directly on the grill.
Cooking
  1. Grill for about 10-12 minutes, turning occasionally, until the veggies are tender and slightly charred.
  2. In the last few minutes of grilling, brush the BBQ sauce on the veggies.
  3. Remove from the grill and serve hot, drizzled with extra BBQ sauce if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Freeze grilled veggies for up to a month. Reheat on the grill or stovetop for fresh flavor.
