Dressing ingredients
  • 1/4 cup mayonnaise Can substitute with vegan mayo for a vegan option.
  • 1/4 cup sour cream Can substitute with vegan sour cream.
  • 1 tablespoon lime juice Fresh lime juice is preferred.
  • 1 teaspoon chili powder Adjust to taste for spiciness.
  • 1/2 teaspoon cumin

Method
 

Preparation
  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooked pasta, shredded chicken, and sweet corn.
Mixing the Dressing
  1. In a separate bowl, mix mayonnaise, sour cream, lime juice, chili powder, cumin, and salt.
Combining
  1. Pour the dressing over the pasta mixture and stir until well coated.
  2. Garnish with chopped cilantro.

  1. Serve immediately or chill in the refrigerator for an hour before serving.

Notes

This pasta salad keeps well in the fridge for up to 3 days, stored in an airtight container. It can also be made a day in advance for better flavor. Consider grilling corn for added smokiness.
