  • 1 pound ground beef
  • 4 medium-sized potatoes, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup bell peppers, chopped (any color)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • 1 cup shredded cheese (cheddar or your choice)
  • Fresh cilantro for garnish (optional)

Method
 

Cooking Instructions
  1. In a large skillet, heat the olive oil over medium-high heat.
  2. Add the ground beef and cook until browned, about 5-7 minutes. Make sure to break it apart as it cooks.
  3. Toss in the onion, garlic, and bell peppers and cook until they’re tender and fragrant, around 3-4 minutes.
  4. Stir in the potatoes, black beans, diced tomatoes, and all the spices. Season with salt and pepper.
  5. Cover and cook for about 15-20 minutes, stirring occasionally, until the potatoes are tender.
  6. Top with shredded cheese and cover to let it melt for 2-3 minutes before serving.

Notes

Serve this dish straight from the skillet with a sprinkle of fresh cilantro. Pair with crusty bread or top with sour cream or avocado if desired. Leftovers can be stored in an airtight container in the fridge for 3-4 days or frozen for up to 3 months.
