  • 2 pieces Grilled chicken breasts Cooked and sliced
  • 1 can Black beans Rinsed and drained
  • 1 cup Sweet corn Canned or frozen
  • 4 cups Romaine lettuce Chopped
  • 1 medium Avocado Diced
  • 1 cup Cherry tomatoes Halved
Dressing
  • 1/2 cup Chipotle-lime dressing Store-bought or homemade

Method
 

Preparation
  1. Grill the chicken until fully cooked. Slice into strips.
  2. In a large bowl, combine black beans, sweet corn, chopped romaine, diced avocado, and halved cherry tomatoes.
  3. Add the grilled chicken on top.
  4. Drizzle the chipotle-lime dressing over the salad.
  5. Toss gently to combine all ingredients. Serve immediately or store in the fridge for meal prep.

Notes

You can use leftover chicken to save time. Chill before serving for a refreshing taste. Try different variations with chickpeas, bell peppers, or even grilled tofu for a vegetarian version.
