Sourdough Banana Cinnamon Rolls

Ingredients
  

Dough Ingredients
  • 215 g mashed banana (2 medium) Use ripe bananas for better sweetness.
  • 65 g milk Any type of milk can be used.
  • 60 g sourdough starter Ensure it's active for best results.
  • 70 g sugar
  • 1 large egg
  • 480 g bread flour
  • 5 g salt
  • 113 g room temperature butter (1 stick)
Filling Ingredients
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/4 cup chopped walnuts or pecans (optional) Nuts can be omitted or substituted.
Frosting Ingredients
  • 3 oz softened cream cheese
  • 1/2 tsp vanilla
  • 1 cup powdered sugar

Method
 

Preparation
  1. Combine mashed banana, milk, sourdough starter, sugar, and egg in a mixing bowl.
  2. Slowly mix in flour and salt until a dough forms.
  3. Knead the dough for about 8 minutes until smooth and elastic.
  4. Let the dough rest in a warm spot for 4-6 hours until it doubles in size.
  5. Roll the dough out into a rectangle about 1/2 inch thick on a floured surface.
  6. Spread softened butter, brown sugar, cinnamon, and nuts (if using) on the rolled dough.
  7. Roll tightly from the long side and slice into buns.
  8. Place rolls in a greased baking dish and let them rise for another hour.
Baking
  1. Bake at 350°F (175°C) for 25-30 minutes.
  2. Once cooled, mix cream cheese, vanilla, and powdered sugar to frost the rolls.

Notes

For an extra touch, sprinkle on some chopped nuts or drizzle with caramel sauce before serving.
