  • 1 pound shrimp, peeled and deveined
  • 1 pound smoked sausage, sliced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Cooked rice, for serving (optional)
  • Chopped parsley for garnish

Method
 

Cooking Instructions
  1. In a large skillet, heat olive oil over medium heat.
  2. Add onions and bell peppers; sauté until softened.
  3. Stir in garlic and cook for about 1 minute.
  4. Toss in the smoked sausage and cook until browned.
  5. Add diced tomatoes, chicken broth, Worcestershire sauce, Cajun seasoning, salt, and pepper.
  6. Bring to a simmer, then add the shrimp.
  7. Cook until shrimp are pink and cooked through, about 5-7 minutes.
  8. Serve hot over cooked rice and garnish with chopped parsley.

Notes

This dish keeps well in the fridge for about 3-4 days in an airtight container. Reheat in the microwave or on the stove. For extra spice, add jalapeños or hot sauce.
