Smothered Pork Chops with Potatoes in Gravy

Ingredients
  

For the Pork and Seasoning
  • 4 pieces bone-in pork chops (about 1 inch thick) About 1 inch thick
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 2 tablespoons vegetable oil (or olive oil)
For the Gravy and Potatoes
  • 1 medium onion (thinly sliced)
  • 3 cloves garlic (minced)
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth (low sodium preferred)
  • ½ cup heavy cream (or whole milk)
  • 1 teaspoon dried thyme (or 1 tablespoon fresh)
  • 2 pounds baby potatoes (halved or quartered if large)
  • 2 tablespoons butter
  • to taste tablespoons fresh parsley (chopped, for garnish)

Method
 

Preparation
  1. Pat the pork chops dry and season both sides with salt, pepper, paprika, and garlic powder.
  2. Heat oil in a large skillet or Dutch oven over medium-high heat. Sear pork chops for 3–4 minutes per side until golden brown. Remove and set aside.
  3. In the same pan, add onions and cook for 5 minutes until soft and golden. Stir in garlic and cook for 1 minute more.
  4. Sprinkle flour over the onions and stir well to coat. Slowly whisk in chicken broth until smooth.
  5. Add cream, thyme, and butter. Simmer for 5 minutes until the gravy thickens.
  6. Nestle potatoes into the gravy, then place pork chops on top. Spoon some gravy over the meat.
  7. Cover and reduce heat to low. Cook for 25–30 minutes, stirring occasionally, until the potatoes are fork-tender and the pork chops are fully cooked (internal temp 145°F / 63°C).
  8. Garnish with chopped parsley. Serve hot with extra gravy spooned over the pork chops and potatoes.

Notes

Make sure your potatoes are uniform in size for even cooking. Use chicken thighs instead of chops for extra juiciness. For a thicker gravy, add more flour and whisk well.
