Ingredients
  

Crust
  • 2 cups graham cracker crumbs For a classic s'mores flavor.
  • 1/2 cup sugar To sweeten the crust.
  • 1/2 cup unsalted butter, melted Helps bind the crust together.
Filling
  • 3 packages (8 oz) cream cheese, softened Ensure it’s at room temperature for easier mixing.
  • 1 cup sugar Sweetens the filling.
  • 3 large eggs Add one at a time for better incorporation.
  • 1 teaspoon vanilla extract Enhances the flavor.
  • 1 cup chocolate chips To be melted and poured over the cheesecake.
  • 1 cup mini marshmallows For toasting on top before serving.

Method
 

Preparation
  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat the softened cream cheese and sugar until smooth.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Pour the cream cheese mixture over the crust.
Baking
  1. Bake for 45-50 minutes or until set.
  2. Remove from the oven, cool, then refrigerate for at least 4 hours.
Finishing Touches
  1. Melt chocolate chips and pour over cooled cheesecake.
  2. Top with mini marshmallows and broil until lightly toasted.
  3. Slice and serve.

Notes

Store leftovers in the fridge for up to 5 days or freeze for up to 3 months. Allow to thaw in the fridge before serving. For a softer cheesecake, let cream cheese come to room temperature before mixing.
