Preparation
- Preheat the oven to 375°F (190°C).
- Grease a pie dish or quiche pan with butter or oil.
- Spread the mashed potatoes evenly in the bottom and up the sides of the pan to form a crust.
Filling
- In a bowl, whisk together the eggs and milk.
- Stir in the cheese, diced vegetables, cooked protein, salt, and pepper.
- Pour the egg mixture over the potato crust.
Baking
- Bake for 30-35 minutes, or until the quiche is set and golden brown.
- Let it cool for a few minutes before slicing and serving.
Notes
Serve hot or warm, ideally with a fresh herb salad or sliced tomatoes. For added flair, a dollop of sour cream or fresh herbs is recommended. Store leftovers in the fridge for 3-4 days or freeze slices individually for up to 2 months.
