Ingredients
  

For the Peach Filling
  • 4 cups fresh or frozen peaches, sliced
  • 1 cup sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
For the Cobbler Batter
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1/2 cup butter, melted
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. In a bowl, combine the sliced peaches, sugar, lemon juice, and cinnamon; mix well and pour into the bottom of the slow cooker.
  2. In another bowl, whisk together the flour, baking powder, and salt. Add the milk, melted butter, and vanilla extract; mix until just combined.
  3. Pour the batter over the peach mixture in the slow cooker.
Cooking
  1. Cover and cook on low for 4-6 hours, or until the cobbler is set and bubbly.
Serving
  1. Serve warm, optionally with ice cream.

Notes

This dessert stays tasty for about 3-4 days in the fridge. You can also freeze it for up to three months. A sprinkle of cinnamon on top as it warms up works wonders!
