  • 1 onion, diced
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 2 cups beef broth Can substitute with vegetable broth for a lighter flavor.
  • 2 cloves garlic, minced Browning the garlic enhances the flavor.
Seasonings
  • 1 teaspoon dried thyme
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon black pepper

Preparation
  1. Heat olive oil in a skillet over medium heat. Add diced onion and minced garlic, sauté until softened.
  2. Add ground beef to the skillet, cook until browned.
  3. Transfer the beef mixture to the slow cooker.
  4. Add sliced carrots, diced potatoes, beef broth, thyme, salt, and pepper to the slow cooker.
  5. Stir to combine all ingredients.

Notes

For a thicker stew, mix a tablespoon of corn starch with cold water and stir it in during the last cooking stage. To add a twist, consider using ground turkey or chicken as an alternative to beef.
