  • 4 cups potatoes, diced Sweet potatoes can be used for a nutritious boost.
  • 1 can (15 oz) beans, drained (e.g., kidney or black beans)
  • 1 can (15 oz) corn, drained
  • 2 cups shredded cheese (e.g., cheddar) Other cheese options include Monterey Jack or pepper jack.
  • 1 can (28 oz) tomato sauce
  • 1 packet taco seasoning Optional for added flavor.
  • Salt and pepper to taste

Method
 

Cooking
  1. In a slow cooker, add the ground beef and cook until browned. Drain any excess fat.
  2. Add the diced potatoes, beans, corn, tomato sauce, and optional taco seasoning to the slow cooker.
  3. Stir to combine all ingredients well.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
  5. About 30 minutes before serving, sprinkle shredded cheese over the top and cover until melted.
  6. Season with salt and pepper to taste before serving.

Notes

Consider topping with fresh cilantro or sour cream. Pairs well with a simple side salad or crusty bread. Store leftovers in the fridge for 3-4 days or freeze for up to 3 months.
