  • 4 pieces boneless, skinless chicken breasts
  • 1 medium onion, diced
  • 2 pieces bell peppers, sliced
  • 3 cloves garlic, minced Pro tip: Toast the garlic for added flavor.
  • 14 oz can crushed tomatoes
  • 1 cup chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Method
 

Preparation
  1. Place the chicken breasts at the bottom of the slow cooker.
  2. Add the diced onion, sliced bell peppers, and minced garlic on top of the chicken.
  3. Pour the crushed tomatoes and chicken broth over the vegetables.
  4. Sprinkle oregano, basil, salt, and pepper over the mixture.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  6. Before serving, shred the chicken and mix it back into the sauce.
  7. Garnish with fresh parsley if desired and serve with pasta or crusty bread.

Notes

This dish can be made vegan by substituting chicken with chickpeas or mushrooms and using vegetable broth. Leftovers can be stored in the fridge for 3-4 days or in the freezer for up to 3 months. Reheat gently on the stove or in the microwave, adding a splash of water if it thickens up too much.
