Ingredients
  

For the Beef Tips
  • 2 pounds beef stew meat or chuck roast (cut into chunks) Opt for a budget-friendly cut.
  • 1 tablespoon olive oil For searing the beef.
  • 1 teaspoon salt To season the beef.
  • ½ teaspoon black pepper To season the beef.
  • 1 teaspoon garlic powder For seasoning.
  • 1 teaspoon onion powder For seasoning.
  • ½ teaspoon paprika For seasoning.
For the Gravy
  • 1 medium onion (diced)
  • 3 cloves garlic (minced) Enhances the flavor.
  • 1 ½ cups beef broth
  • 3 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce (optional for depth) For added flavor.
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 2 tablespoons cornstarch To thicken the gravy.
  • 3 tablespoons water (to mix with cornstarch)

Method
 

Season and Sear the Beef
  1. Pat the beef dry and season with salt, pepper, garlic powder, onion powder, and paprika.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Sear the beef chunks on all sides for about 2–3 minutes until browned.
  4. Transfer the beef to the slow cooker.
Build the Sauce
  1. Add diced onion and minced garlic over the beef.
  2. Pour in the beef broth, Worcestershire sauce, soy sauce (if using), thyme, and parsley.
  3. Stir gently to combine.
Slow Cook
  1. Cook on LOW for 6–7 hours or HIGH for 3–4 hours, until beef is tender.
Thicken the Gravy
  1. In a small bowl, mix the cornstarch and water to create a slurry.
  2. Pour it into the slow cooker and stir well.
  3. Cover and cook for an additional 20–30 minutes until the gravy thickens.
Serve
  1. Serve the beef tips and gravy over mashed potatoes, egg noodles, or rice.
  2. Spoon extra gravy on top for good measure.

Notes

Leftovers can be stored in the fridge for up to 3 days or frozen for up to 3 months.
