Main Ingredients
  • 8 oz Ramen noodles Any instant ramen, avoid flavor packets
  • 1 lb Ground beef Use lean ground beef for a healthier option
  • 2 medium Carrots, sliced
  • 1 medium Red pepper, sliced
  • 3 stalks Green onions, chopped Reserve some for garnish
Sauce
  • 1/4 cup Soy sauce
  • 2 tbsp Brown sugar Can substitute with maple syrup for a vegan option
  • 1 tbsp Ginger Minced
  • 3 cloves Garlic Minced
  • 4 cups Beef broth Can substitute with vegetable broth for a vegan option

Method
 

Preparation
  1. In a crockpot, combine the ground beef, carrots, red peppers, and green onions.
  2. In a separate bowl, whisk together soy sauce, brown sugar, ginger, minced garlic, and beef broth until well combined.
  3. Pour the sauce over the beef and vegetables in the crockpot.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  2. About 30 minutes before serving, add the ramen noodles to the crockpot and stir.
  3. Cook until the noodles are tender, then serve hot.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days or freeze for 2-3 months. Add a splash of beef broth when reheating.
