Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Cut the potatoes into bite-sized pieces and toss them with olive oil, salt, and pepper. Spread them on a baking sheet.
  3. Roast the potatoes for about 20-25 minutes or until tender.
  4. Season the chicken breasts with salt and pepper.
  5. Cook the chicken in a skillet over medium heat until cooked through.
  6. Add the barbecue sauce to the chicken and let it simmer for a few minutes.
  7. Steam or roast the broccoli until tender.
Assembly
  1. Place the roasted potatoes in a bowl, top with the barbecue chicken, and serve with broccoli on the side.

Notes

For even cooking, cut the potatoes uniformly. Use pre-cooked chicken for quicker preparation. Sweet potatoes can be substituted for a fun twist. Add spices like garlic powder or paprika for extra flavor.
