Preparation
- Preheat the oven to 450°F (232°C).
- In a large skillet, heat olive oil over medium heat.
- Season the chicken inside and out with salt and pepper.
- Place the onion, garlic, and half of the lemon slices in the skillet, then place the chicken on top.
- Scatter the remaining lemon slices and herbs over the chicken.
Cooking
- Roast in the oven for about 1 hour, or until the chicken reaches an internal temperature of 165°F (74°C).
- Let the chicken rest before carving and serve with the pan juices.
Notes
Serve with roasted veggies for an elegant presentation. Store leftovers in the fridge for up to 3 days in an airtight container or freeze for a month. Reheat gently in the oven.
