For the cookie
  • 20 g butter, room temperature 1 tbsp + 1 tsp
  • 15 g brown sugar 1 tbsp + 1 tsp
  • 10 g granulated sugar 2 tsp
  • 1 tbsp double cream or heavy cream
  • 1/4 tsp vanilla extract
  • 40 g plain flour or all-purpose flour 1/3 cup
  • 1/8 tsp baking soda
  • Pinch salt
  • 30 g chopped dark chocolate or chocolate chips 2 tbsp + 2 tsp

Method
 

Preparation
  1. Pre-measure your ingredients to keep things organized.
  2. Let the butter soften to room temperature.
  3. In a small bowl, cream the butter with brown sugar and granulated sugar until light and fluffy.
  4. Mix in double cream and vanilla extract until silky.
  5. Sift in flour, baking soda, and salt, and stir gently until a dough forms.
  6. Fold in chopped chocolate or chocolate chips.
  7. Preheat oven to 350°F (175°C) and shape the dough into a ball, then flatten slightly.
  8. Bake for 10-12 minutes until edges are golden.
  9. Cool slightly on a wire rack before enjoying.

Notes

Serve your cookie warm, maybe with a scoop of vanilla ice cream. Store in an airtight container for up to 2 days or freeze for a month. Reheat in the oven for about 5 minutes.
