Simple Perfect Banana Bread

Ingredients

  • 3 pieces ripe bananas, mashed The riper, the better.
  • 1/3 cup melted butter
  • 3/4 cup sugar Adjust to taste for sweetness.
  • 1 large egg, beaten Can substitute with a flax egg for a vegan version.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 cup all-purpose flour Can be substituted with whole wheat or gluten-free flour.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir in the melted butter.
  3. Mix in the sugar, beaten egg, and vanilla extract.
  4. Sprinkle the baking soda and salt over the mixture and blend in.
  5. Add the flour and stir until just combined. Do not overmix!
  6. Pour the batter into a greased 4x8 inch loaf pan.
Baking
  1. Bake for 60-65 minutes or until a toothpick inserted in the center comes out clean.
  2. Let it cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

Notes

Cool before slicing to avoid mushy bread. Serve warm; consider adding butter, nut butter, honey, or maple syrup for extra flavor. Can store on the counter for 3-4 days, in the fridge for up to a week, or freeze in slices.
