  • 8 ounces pasta (spaghetti or your choice)
  • 1 pound shrimp, peeled and deveined
  • 2 medium zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • salt and pepper to taste

  • Fresh parsley for garnish
  • Grated Parmesan cheese

Method
 

Preparation
  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute until fragrant.
Cooking
  1. Add shrimp to the skillet and cook until pink and opaque, about 3-4 minutes.
  2. Stir in the zucchini and cherry tomatoes, and cook for another 3-4 minutes until the vegetables are tender.
  3. Add the cooked pasta to the skillet, tossing everything together. Season with salt and pepper to taste.
Serving
  1. Serve warm, garnished with fresh parsley and grated Parmesan cheese if desired.

Notes

Timing is key: Don’t overcook the shrimp, or they’ll turn rubbery. A quick 3-4 minutes is all you need! Experiment with add-ins like spinach or asparagus for added color and nutrition. Use whole grain or gluten-free pasta for a healthier option.
