- In a large skillet, heat the vegetable oil over medium heat. Add the onion, bell pepper, and celery, cooking until softened.
- Stir in the garlic and cook for an additional minute.
- Add the shrimp and Cajun seasoning, cooking until the shrimp are pink and opaque.
- Remove the shrimp mixture from the skillet and set aside.
- In the same skillet, add the rice and toast for 1-2 minutes until fragrant.
- Pour in the chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for about 18-20 minutes until rice is cooked.
- Once the rice is done, stir the shrimp mixture back in and season with salt, pepper, and additional Cajun seasoning if desired.
- Serve garnished with chopped green onions.
Notes
For best results, don’t overcook the shrimp; they should only take a few minutes. Feel free to swap the Cajun seasoning for a homemade blend if adventurous!
