Preparation
- Preheat the oven to 375°F (190°C) and grease a muffin tin.
- In a large bowl, mix together the cottage cheese, flour, grated cheese, eggs, and milk until well combined.
- In another bowl, whisk together the baking powder, baking soda, salt, and pepper.
- Gradually add the dry ingredients to the wet mixture, stirring just until combined.
- Fold in the fresh herbs and chopped vegetables.
- Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 20-25 minutes, or until the muffins are golden and a toothpick comes out clean.
- Allow to cool slightly before serving.
Notes
These muffins can be stored in the fridge for up to 5 days or frozen for up to 3 months. To reheat, use an oven or microwave. Feel free to customize with your favorite veggies and herbs.
