Ingredients
  

For the Lamb
  • 1 rack rack of lamb
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • to taste Salt and pepper
  • to taste Olive oil
For Serving
  • optional Roasted vegetables e.g., Brussels sprouts, carrots, sweet potatoes

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together minced garlic, chopped rosemary, chopped thyme, salt, pepper, and olive oil to create a paste.
  3. Rub the paste all over the rack of lamb.
Cooking
  1. Place the rack in a roasting pan and roast for 20-25 minutes for medium-rare, or until desired doneness.
  2. Let it rest for 10 minutes before slicing.
Serving
  1. Serve with roasted vegetables or a side of choice.

Notes

For storage, keep leftovers tightly wrapped in the fridge for up to 3 days or freeze for 4-6 months. Reheat gently in the oven to prevent drying out.
