  • 1 whole whole chicken (about 4-5 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 2 large oranges, zest and juice
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 small onion, quartered
  • 1 cup chicken broth
  • 2 tablespoons butter (optional) For added richness

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Pat the chicken dry and season it with salt and pepper.
  3. In a bowl, mix olive oil, garlic, herbs, orange zest and juice, honey, soy sauce, Dijon mustard, and seasoning for the glaze.
  4. Place the chicken in a roasting pan with quartered onions.
  5. Pour the glaze over the chicken, then add chicken broth.
Cooking
  1. Roast for 1.5 hours, basting every 30 minutes.
  2. Optional: Add butter during the last basting for extra richness.
  3. Let the chicken rest before carving and serve.

Notes

Tips: Don't skip basting! It gives you that deep, rich flavor. Store leftovers in an airtight container for up to 3-4 days in the fridge or freeze for up to 3 months.
