  • 2 pieces acorn squashes
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme or rosemary substitutable with sage or oregano
  • 1 tablespoon maple syrup optional
  • to taste salt
  • to taste pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Cut the acorn squashes in half and remove the seeds.
  3. Brush the insides with olive oil and sprinkle with salt, pepper, and herbs.
  4. Place the squashes cut side down on a baking sheet.
Cooking
  1. Roast for about 25-30 minutes, or until tender.
  2. If desired, drizzle with maple syrup before serving.

Notes

For a little extra crunch, flip the squashes cut-side up for the last 10 minutes of roasting. Roast in advance and refrigerate for 3-5 days. It can also be frozen for up to 3 months.
