Main Ingredients
  • 2 cups Chicken breast, cooked and shredded
  • 1 can Green chiles Adjust heat level as desired.
  • 4 cups Chicken broth Make sure it's gluten-free if necessary.
  • 1 can Canned tomatoes
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced Toast garlic for added flavor.
  • 1 teaspoon Cumin
  • 1 teaspoon Oregano
  • 2 tablespoons Olive oil
  • 1 cup Bell peppers, chopped
  • 1/4 cup Cilantro Fresh, for garnish.
  • 2 tablespoons Lime juice Adds brightness.
  • to taste Salt & pepper

Method
 

Preparation
  1. Sauté the onions and garlic in olive oil until they are fragrant.
  2. Add the bell peppers and cook until they're tender.
  3. Stir in the shredded chicken, green chiles, chicken broth, canned tomatoes, cumin, oregano, salt, and pepper. Bring to a simmer.
  4. Simmer for about 20 minutes to let the flavors mingle.
  5. Finish with lime juice and fresh cilantro before serving.

Notes

For leftovers, store in the fridge for 3-4 days or freeze for up to 3 months. Excellent served with tortilla chips or cornbread.
