- Sauté the onions and garlic in olive oil until they are fragrant.
- Add the bell peppers and cook until they're tender.
- Stir in the shredded chicken, green chiles, chicken broth, canned tomatoes, cumin, oregano, salt, and pepper. Bring to a simmer.
- Simmer for about 20 minutes to let the flavors mingle.
- Finish with lime juice and fresh cilantro before serving.
Notes
For leftovers, store in the fridge for 3-4 days or freeze for up to 3 months. Excellent served with tortilla chips or cornbread.
