Preparation
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, mix together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add in the eggs, milk, oil, and vanilla extract; beat until well combined.
- Stir in the boiling water until the batter is smooth (it will be a bit thin, but that's okay!).
- Pour the batter evenly into the prepared pans.
Baking
- Bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
Assembly
- Once cooled, layer the cakes with chocolate frosting between and on top.
- Serve and enjoy your delicious Rich Chocolate Birthday Cake!
Notes
Use room temperature ingredients for a smoother batter. Avoid overmixing to achieve a tender crumb. Sifting cocoa powder removes lumps for a smooth cake. Experiment with frostings for new flavors.
