Ingredients

Dry Ingredients
  • 1 3/4 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
Wet Ingredients
  • 2 large eggs Room temperature
  • 1 cup whole milk Room temperature
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water Adds moisture to the batter
  • 2 cups chocolate frosting For layering and topping

Method

Preparation
  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, mix together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add in the eggs, milk, oil, and vanilla extract; beat until well combined.
  4. Stir in the boiling water until the batter is smooth (it will be a bit thin, but that's okay!).
  5. Pour the batter evenly into the prepared pans.
Baking
  1. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  2. Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
Assembly
  1. Once cooled, layer the cakes with chocolate frosting between and on top.
  2. Serve and enjoy your delicious Rich Chocolate Birthday Cake!

Notes

Use room temperature ingredients for a smoother batter. Avoid overmixing to achieve a tender crumb. Sifting cocoa powder removes lumps for a smooth cake. Experiment with frostings for new flavors.
