Ingredients
  

For the crust
  • 1 cup melted butter Use unsalted butter.
  • 1 cup all-purpose flour
  • 1 cup rolled oats Old-fashioned for a chewier texture.
  • 1/2 cup brown sugar
For the rhubarb filling
  • 2 cups chopped rhubarb Chop into similar-sized pieces for even cooking.
  • 1 cup granulated sugar Adjust the sweetness if desired.
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract
For the cream cheese topping
  • 8 oz cream cheese Use room temperature for easier mixing.
  • 1 cup powdered sugar
  • 1 tsp vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and prepare a 9x13 inch baking dish.
  2. Mix flour, oats, brown sugar, and melted butter together. Press the mixture into the baking dish and bake for 15 minutes.
Rhubarb Filling
  1. In a saucepan, cook rhubarb, granulated sugar, and cornstarch until it thickens. Stir in vanilla extract.
  2. Spread the rhubarb mixture over the crust and bake for another 10-15 minutes.
Cream Cheese Topping
  1. In a mixing bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
  2. Spread the cream cheese topping over the cooled bars and chill for at least 2 hours.
Serving
  1. Cut into squares and serve with a scoop of vanilla ice cream or fresh mint.

Notes

These bars are best enjoyed after chilling. Store covered in the fridge for up to 5 days, or freeze for up to 3 months. Thaw overnight in the fridge before serving.
